Recipe Ingredients

  • ½ (10.9-ounce) box Kellogg's® Eggo® Mini Homestyle Waffles
  • 1 (8-ounce) wheel brie, cut into 1/4-inch wedges
  • 8 strips bacon, cooked and cut into 2-inch pieces
  • 2 cups packed baby arugula
  • ½ cup pomegranate arils
  • Fresh thyme sprigs, for garnish

Recipe Directions

  1. Toast mini waffles according to package directions, and separate waffles.
  2. Preheat oven to 350°F and line a rimmed baking sheet with parchment paper. Place waffles in an even layer on prepared baking sheet. Top each waffle with a wedge of brie. Bake until cheese is melted, about 3 to 4 minutes.
  3. Top each waffle evenly with bacon, arugula and pomegranate arils. Garnish with thyme and serve immediately.
