For the Sugar Cookies

  • 1 16.5oz roll Pillsbury Refrigerated Sugar Cookie Dough

For the Filling

  • 1 pint Twix ice cream

Recipe Directions

  1. Preheat oven to 350°F. Slice the dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper, leaving space between each cookie.
  2. Bake cookies in preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove and let cool for a few minutes before transferring to a wire rack to cool completely.
  3. While the cookies are cooling, take the pint of ice cream out of the freezer to soften slightly, about 5-10 minutes.
  4. Assemble the sandwiches: Take one cooled cookie and scoop a generous amount of ice cream onto it. Top with another cookie, pressing down gently to form a sandwich. Repeat with the remaining cookies and ice cream.
  5. Place the assembled cookie sandwiches back in the freezer for at least 30 minutes to firm up the ice cream. Serve and enjoy!
