For the Sugar Cookies
- 1 16.5oz roll Pillsbury Refrigerated Sugar Cookie Dough
For the Filling
- 1 pint Twix ice cream
Recipe Directions
- Preheat oven to 350°F. Slice the dough into 1/4-inch thick rounds and place them on a baking sheet lined with parchment paper, leaving space between each cookie.
- Bake cookies in preheated oven for 10-12 minutes, or until the edges are lightly golden. Remove and let cool for a few minutes before transferring to a wire rack to cool completely.
- While the cookies are cooling, take the pint of ice cream out of the freezer to soften slightly, about 5-10 minutes.
- Assemble the sandwiches: Take one cooled cookie and scoop a generous amount of ice cream onto it. Top with another cookie, pressing down gently to form a sandwich. Repeat with the remaining cookies and ice cream.
- Place the assembled cookie sandwiches back in the freezer for at least 30 minutes to firm up the ice cream. Serve and enjoy!
