Recipe Ingredients

  • Fortune Avenue Chicken Potstickers
  • 1 onion, sliced
  • 1 stalk of lemongrass, sliced
  • 1 tablespoon ginger, roughly chopped
  • 4 garlic cloves, smashed
  • 1-2 thai chili peppers, sliced
  • 2 tablespoon red curry paste
  • 4 cups chicken stock
  • 13.6 ounces coconut cream
  • 2 cups baby bella mushrooms, sliced
  • 1/2 lime, juiced
  • 1/2 tsp. coconut sugar
  • 1 tsp. fish sauce

Recipe Directions

  1. Add a splash of butter or neutral oil to a large sauce pot over medium heat. Once hot, add onion, lemongrass, ginger, garlic and thai chili peppers and sauce simmer for a few minutes. Stir in the red curry paste and continue to cook for an additional 3-4 minutes, stirring occasionally.
  2. Pour in the chicken stock, mix until combined, cover, and bring to a simmer. Let the soup simmer on low heat for 25-30 minutes. Take out the aromatics, leaving just the broth.
  3. Add in the coconut cream and mushrooms. Simmer for 5-10 minutes or until the mushrooms are cooked. Turn the heat off and add in the lime juice, coconut sugar, and fish sauce. Add 4-5 cooked potstickers to a bowl and spoon the broth over the top. Garnish with cilantro and extra lime.
