Recipe Ingredients
- 16 Delimex Chicken Taquitos
- 16 butter lettuce leaves
- 2 avacados
- 1/4 cup queso cheese
For the Pico de Gallo
- 2 tomatoes diced
- 1/4 cup red onion diced
- 1 jalapeno diced
- 2 tablespoons fresh cilantro chopped
- 2 tablespoons lime juice
- Pinch of salt
For the chipotle sauce
- 1 cup sour cream
- 1-2 chipotle peppers in Adobo sauce
- 1 tablespoon lime juice
Recipe Directions
1. In a bowl combine all ingredients for the Pico de Gallo. Toss to combine and refrigerate until ready to serve.
2. For the sauce, blend sour cream, chipotle peppers and lime juice until creamy.
3. Cook the taquitos in the air fryer per package instructions.
4. Build the lettuce wrap with a spoon of smashed avocado, follow with Taquitos, Pico de Gallo, chipotle dressing and queso cheese.
5. Enjoy!
