Burgers
- 1 (10-ounce) package Birds Eye® Steamfresh® Sweet Peas
- 2 medium russet potatoes, peeled and cubed
- 1/2 sweet onion, chopped
- 1 cup crumbled feta cheese
- 1 tablespoon fresh dill, minced
- 1 tablespoon fresh parsley, minced
- 1 large egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
Sauce
- 1 cup Greek yogurt
- 1 tablespoon fresh dill, minced
- 1 teaspoon lemon zest
- 2 tablespoons lemon juice
- 1/3 cup crumbled feta cheese
- Salt and black pepper to taste
Recipe Directions
- Start by blanching the sweet peas for 2-3 minutes in boiling water. Drain and transfer them into a bowl. Mash the sweet peas using a fork.
- Boil potatoes in salt water until soft. Drain and let them cool for 10 minutes.
- Add potatoes, onion, feta cheese, herbs, egg, and seasoning into the same bowl as sweet peas. Using your hand or a potato masher combine the mixture well. Make 4” diameter patties and refrigerate them for 30 minutes.
- In the meantime, in a bowl combine all ingredients for the sauce. Refrigerate until ready to serve.
- Spray some olive oil over the patties and air fry them for 15 minutes @ 375F.
- Serve on toasted buns with creamy yogurt sauce, tomato, onion and arugula.
