Recipe Ingredients

  • 1/2 (12.3-ounce) box Kellogg's® Eggo® Strawberry Waffles
  • 1 cup heavy cream, kept cold
  • 3 tablespoons sugar, or powdered sugar
  • 1 teaspoon vanilla bean paste
  • 1 cup mascarpone, room temperature
  • 2 cups strawberries, hulled and quartered
  • 1/4 cup pistachios
  • Fresh mint sprigs, for garnish

Recipe Directions

  1. Toast waffles according to package directions.
  2. Meanwhile, whisk heavy cream, sugar and vanilla together in large bowl until soft peaks form. Add mascarpone and whip until stiff.
  3. Stack waffles and top with whipped cream, strawberries and pistachios. Garnish with mint and serve.
