Recipe Ingredients
- 1 pkg. Gardein Plant-Based Meatballs
- 1 can coconut cream
- 1 pkg. spaghetti
- 1/4 cup shallots
- 2 bay leaves
- 1/2 tsp. cumin seeds
- 3 dried chilis
- 1 inch cinnamon stick
- 1/2 cup garlic
- 1 can diced tomatoes
- cayenne pepper
- salt
- Thai chili pepper
Recipe Directions
- Put your pasta into a pot and let it cook. (Don’t throw away the pasta water after it's cooked!)
- In a pan, heat some oil on medium heat and add in finely chopped shallots, 2 bay leaves, ½ tsp cumin seeds, 3 dried chilis, and 1 cinnamon stick. Cook until shallots are translucent.
- After the shallots are translucent, add in one whole blob of minced garlic.
- Cook until garlic is toasted and add 1 can diced tomatoes, ¼ tsp cayenne pepper (according to your spice preference) and salt according to taste. Let it simmer for 10 minutes.
- After the mix is thick, add in ½ cup coconut cream, and add in your meatballs. Let it cook (taste and adjust with salt).
- Add in your pasta, some of the pasta water and Thai chili pepper. Let it cook for 10 minutes and enjoy.
