Recipe Ingredients
- 1 bag Cascadian Farm Organic Frozen Peas & Carrots
- 1-2 large Yukon or golden potatoes
- 1 head cauliflower
- 2 tablespoons butter
- Optional cheese for the cauliflower and potato mash
- 1/4-1/2 cup bone broth (depending on desired consistency)
- Dried chives
- Sea salt and pepper to taste
- 1/2 onion, chopped (can use frozen)
- 1 lb ground beef
Recipe Directions
- Steam the cauliflower and potatoes then add to a blender, food processor, or hand immersion blender, along with the butter, cheese, bone broth, salt, and pepper and blend until smooth.
- Cook the beef on the stovetop with the extra virgin olive oil, onion, and frozen veggies.
- Once done, add the beef mixture to the bottom of a large baking dish then top with mashed potato mixture.
- Bake at 400F for 25 minutes.
- Broil for 2 minutes to brown the top if needed.
Very good as is. We added Worcestershire sauce and two cloves of garlic just a personal choice however optional for sure.
