Recipe Ingredients

  • 2 tablespoons olive oil
  • 1 28 ounce bag Alexia Hash Browns
  • 8 ounces Canadian bacon, cut into 1 inch pieces
  • 6 large eggs
  • Chopped fresh chives, for garnish

Recipe Directions

1. Preheat oven to 400°F and coat a rimmed baking sheet with olive oil. Spread hashbrowns in an even layer on prepared baking sheet. Top evenly with bacon. Bake for 25 to 30 minutes until light golden-brown.
2. Make 6 small wells in the hash brown mixture. Crack an egg into each well. Bake for an additional 10 to 12 minutes until eggs reach desired doneness.
3. Garnish with chives and serve.
