Recipe Ingredients
- 12 frozen Jośe Olé® Taquitos, Chicken in Corn Tortilla
- 1 (30-ounce) bag frozen shredded hash browns
- 1 medium yellow onion, finely chopped
- 1/4 cup vegetable oil
- 5 large eggs, lightly beaten
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- Sour cream, for serving
- Chopped fresh chives, for garnish
Recipe Directions
- Preheat oven to 350°F and coat a 9x13-inch baking dish with nonstick cooking spray. Arrange taquitos in a single layer in bottom of prepared baking dish.
- Mix potatoes, onions, oil, eggs, salt and pepper together in large bowl until combined. Spread potato mixture evenly over taquitos.
- Bake until top of casserole is golden-brown and center is set, about 45 to 1 hour. Allow to cool at room temperature for 10 minutes before slicing.
- Top with a dollop of sour cream. Garnish with chives and serve.
