Peanut Butter Cookie Layer
- 1 cup firmly packed brown sugar
- 1/2 cup Land O Lakes® Butter, softened
- 1/2 cup peanut butter
- 1 large Land O Lakes® Egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Brownie Layer
- 1 1/2 cups sugar
- 2/3 cup Land O Lakes® Butter
- 1/4 cup water
- 1 (11- to 12-ounce) package (2 cups) semi-sweet or dark chocolate chips
- 1 tablespoon vanilla extract
- 4 large Land O Lakes® Eggs
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Recipe Directions
- Heat oven to 350°F. Line 13x9-inch baking pan with parchment paper. Set aside.
- Combine brown sugar, 1/2 cup butter and peanut butter in bowl. Beat at medium speed until well mixed. Add egg and 1 teaspoon vanilla; continue beating until well mixed. Add 1 1/2 cups flour, baking powder, 1/2 teaspoon baking soda and 1/2 tesapoon salt. Beat at low speed until well mixed. Press dough into prepared pan. Set aside.
- Combine sugar, 2/3 cup butter and water in 3-quart saucepan over medium heat. Stir occasionally until mixture comes to a boil. Remove from heat. Stir in chocolate chips and 1 tablespoon vanilla. Stir until chocolate is melted. Let cool 5 minutes. Add eggs, 1 at a time, whisking after each until combined. Add 1 1/2 cups flour, 1/2 teaspoon baking soda and 1/2 teaspoon salt; stir until just combined. Pour batter over peanut butter cookie layer. Bake 40-45 minutes or until toothpick inserted into center comes out with moist crumbs. Cool completely.
