Recipe Ingredients
- 1 16 ounce box of Mrs. T's Garlic Parmesan Pierogies
- 1 pound mild Italian sausage
- 8 ounces mushrooms, sliced, washed and stems removed
- 1/2 cup chicken broth
- 1/2 cup sour cream
- 1/2 cup whipped cream cheese
- 2 cups fresh spinach, stems removed and leaves torn into smaller pieces
- 1/2 cup shredded mozzarella cheese
- Italian seasoning, to taste
Recipe Directions
- Preheat your oven to 400°F.
- In a large skillet, sauté the Italian sausage and mushrooms over medium heat until no pink remains (7-10 minutes). Spoon off excess fat.
- Add the chicken broth, sour cream, and cream cheese to the skillet, and stir to incorporate it into the meat and mushrooms to make a sauce (2-3 minutes).
- Add the spinach to the skillet and stir to coat and cook down (1-2 minutes to wilt).
- Place half of the meat and sauce mixture into a casserole dish.
- Layer the pierogies over the meat and sauce mixture.
- Pour the remaining meat and sauce mixture over the pierogies.
- Bake for 20 minutes.
- Remove from the oven and add the cheese and Italian seasoning on top of the casserole. Bake for an additional 5 minutes.
- Allow to rest about 5 minutes, serve, and enjoy!
