Recipe Ingredients

  • 1 16 ounce box of Mrs. T's Garlic Parmesan Pierogies
  • 1 pound mild Italian sausage
  • 8 ounces mushrooms, sliced, washed and stems removed
  • 1/2 cup chicken broth
  • 1/2 cup sour cream
  • 1/2 cup whipped cream cheese
  • 2 cups fresh spinach, stems removed and leaves torn into smaller pieces
  • 1/2 cup shredded mozzarella cheese
  • Italian seasoning, to taste

Recipe Directions

  1. Preheat your oven to 400°F.
  2. In a large skillet, sauté the Italian sausage and mushrooms over medium heat until no pink remains (7-10 minutes). Spoon off excess fat.
  3. Add the chicken broth, sour cream, and cream cheese to the skillet, and stir to incorporate it into the meat and mushrooms to make a sauce (2-3 minutes).
  4. Add the spinach to the skillet and stir to coat and cook down (1-2 minutes to wilt).
  5. Place half of the meat and sauce mixture into a casserole dish.
  6. Layer the pierogies over the meat and sauce mixture.
  7. Pour the remaining meat and sauce mixture over the pierogies.
  8. Bake for 20 minutes.
  9. Remove from the oven and add the cheese and Italian seasoning on top of the casserole. Bake for an additional 5 minutes.
  10. Allow to rest about 5 minutes, serve, and enjoy!
