Recipe Ingredients

  • 1 pound box of Mrs. T’s Garlic & Parmesan Pierogies
  • 2 cups kale, chopped
  • 1 clove of garlic
  • 1/2 cup olive oil
  • 1/2 cup raw cashews
  • Salt

Optional for garnish:

  • Parmesan cheese, freshly grated
  • Fresh parsley, chopped

Recipe Directions

  1. In a food processor, pulse together the kale, garlic, olive oil, and lemon juice until smooth. 
  2. Add the cashews and pulse together until the cashews are ground to desired consistency. Add salt to taste. 
  3. Boil pierogies according to the package instructions.
  4. Drain pierogies and toss with kale pesto.
  5. Garnish with parmesan cheese and parsley if desired.
