Basque Cheesecake Ingredients
- 12 oz. Philadelphia Cream Cheese, softened
- 1 teaspoon lemon zest
- 1/2 cup sugar
- 2 eggs
- 1 cup heavy cream
- 2 teaspoons cornstarch
- 1/8 teaspoon salt
Lemon Curd Ingredients
- 2 eggs
- 1 egg yolk
- 1/2 cup sugar
- 2 teaspoons lemon zest
- 1/4 cup lemon juice
- 2 oz. unsalted butter, cubed
- 1/8 teaspoon salt
Recipe Directions
Basque Cheesecake Instructions
- Preheat oven to 425F.
- Mix Philadelphia cream cheese, lemon zest, and sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Slowly pour in heavy cream while mixing.
- Sift in cornstarch and salt, then mix until well combined.
- Line a muffin tin with parchment paper then pour in the batter up to the rim.
- Bake for 30 minutes, then remove from the oven to cool completely.
- Once cooled, serve with lemon curd in the center.
Lemon Curd Instructions
- In a pot, combine eggs, egg yolk, sugar, lemon zest, lemon juice and salt. Whisk until well combined.
- Heat pot over low heat, stirring constantly. Once slightly thickened, remove from heat then stir in butter.
- Set aside to cool before serving.
