- 1/4 cup heavy cream or whole milk
- 1 tablespoon unsalted butter
- 4 cups packed baby spinach
- 1 1/2 cups cherry tomatoes, halved
- 1 1/2 cups crumbled feta cheese, divided
- 1 tablespoon chopped fresh dill, divided
- 1/2 teaspoon kosher salt
Recipe Directions
- Preheat oven to 375°F. Beat eggs and heavy cream together in large bowl until combined. Melt butter in large 10-inch cast iron skillet over medium heat. Add spinach and cook, stirring frequently, until wilted, about 1 to 2 minutes.
- Add tomatoes, 1 cup feta, 2 teaspoons dill and salt to egg mixture and mix to combine. Pour egg mixture into skillet with spinach. Mix gently to combine.
- Bake until center is set and top is light golden-brown, about 10 to 15 minutes. Top with remaining feta and dill. Slice and serve.
