Recipe Ingredients
- 1 pkg. Green Giant® Mediterranean Style Riced Veggie Blends
- 1 (14 ½ oz.) can garbanzo beans, drained
- 2 cups baby kale
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives
- 2 breasts from a rotisserie chicken, sliced (optional)
- ½ cup crumbled feta cheese
- ¼ cup pine nuts
- ½ cup olive oil
- ¼ cup red wine vinegar
- 1 clove garlic, minced
- 1 tsp. salt
- ½ tsp. freshly ground pepper
- 1/2 lemon, sliced
- Additional salt and pepper, for serving
Recipe Directions
- Prepare Mediterranean Style Riced Veggie Blends as directed on pack.
- Divide kale between two medium serving bowls.
- Divide package of Veggie Blends between the two bowls, creating a mound in each.
- Arrange mounds of garbanzo beans, cherry tomatoes, olives and chicken breast (if using) around bowl.
- Sprinkle with feta cheese and pine nuts.
- Combine olive oil, red wine vinegar, garlic, 1 tsp. salt and ½ tsp. pepper in a lidded container and shake well.
- Pour 1-2 Tbsp., over each bowl or to taste. (You should have some leftover).
- Sprinkle with a little more salt and pepper and serve with lemon slices.
