Recipe Ingredients
- 1 package Gardein Plant-Based Meatballs
- 1 cup quinoa, rinsed
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 cup tomatoes, chopped
- ½ red onion, cut into wedges
- ½ tablespoon olive oil
- salt and pepper, to taste
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- ¼ teaspoon dill
- ¼ teaspoon onion powder
Toppings
- ¼ cup tzatziki
- ¼ cup hummus
- 2 tablespoons olives (kalamata or green)
- fresh dill, chopped
- lemon wedges (optional)
Recipe Directions
- Boil 2 cups water with 1 cup quinoa. Simmer for 15 minutes, then fluff.
- Preheat oven to 425°F. Toss zucchini, squash, tomatoes, and onion with olive oil, salt, pepper, and additional seasonings. Roast for 20-25 minutes.
- Prepare Gardein meatballs as per package directions (bake or sauté).
- Divide quinoa, roasted veggies, and meatballs into bowls. Top each with tzatziki, hummus, olives, and fresh dill. Serve with lemon wedges.
