Recipe Ingredients

  • 1 package Gardein Plant-Based Meatballs
  • 1 cup quinoa, rinsed
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 cup tomatoes, chopped
  • ½ red onion, cut into wedges
  • ½ tablespoon olive oil
  • salt and pepper, to taste
  • ¼ teaspoon dried oregano
  • ¼ teaspoon garlic powder
  • ¼ teaspoon dill
  • ¼ teaspoon onion powder

Toppings

  • ¼ cup tzatziki
  • ¼ cup hummus
  • 2 tablespoons olives (kalamata or green)
  • fresh dill, chopped
  • lemon wedges (optional)

Recipe Directions

  1. Boil 2 cups water with 1 cup quinoa. Simmer for 15 minutes, then fluff.
  2. Preheat oven to 425°F. Toss zucchini, squash, tomatoes, and onion with olive oil, salt, pepper, and additional seasonings. Roast for 20-25 minutes.
  3. Prepare Gardein meatballs as per package directions (bake or sauté).
  4. Divide quinoa, roasted veggies, and meatballs into bowls. Top each with tzatziki, hummus, olives, and fresh dill. Serve with lemon wedges.
