Recipe Ingredients
- 1/2 cup Tropicana Orange Juice
- 3 cups cranberry syrup
- 1 1/2 cups heavy whipping cream
- 8 ounce mascarpone cheese, room temperature
- 1/3 cup cane sugar
- 1 teaspoon orange zest
- 1 teaspoon vanilla extract
- 2 7-ounce packs lady finger cookies
Recipe Directions
- Add 3 cups of cranberry syrup to a large pot and bring to a boil. Turn to low and let simmer until thickened for about 30-40 minutes, or until you have about a cup of the juice left.
- Let this completely cool before adding it to a bowl, along with 1/2 cup of Tropicana Orange Juice.
- In a large mixing bowl, beat together 1 1/2 cups of heavy whipping cream, 8 ounces of room temperature mascarpone cheese, 1/3 cup of cane sugar, 1 teaspoon of orange zest, and 1 teaspoon of vanilla with an electric hand mixer for about 2-3 minutes, or until smooth and fluffy.
- Grab a trifle dish or similar pan and add 2 7-ounce packages of lady finger cookies. Dip the lady fingers in the cranberry-orange mixture and layer the bottom of the dish. Add a layer of mascarpone. Repeat and continue until your dish is full.
- On the last layer of mascarpone, top with shaved white chocolate and orange zest.
- Refrigerate for at least 1 hour before serving and enjoying.
