Recipe Ingredients

  • 1/2 cup Tropicana Orange Juice
  • 3 cups cranberry syrup
  • 1 1/2 cups heavy whipping cream
  • 8 ounce mascarpone cheese, room temperature
  • 1/3 cup cane sugar
  • 1 teaspoon orange zest
  • 1 teaspoon vanilla extract
  • 2 7-ounce packs lady finger cookies

Recipe Directions

  1. Add 3 cups of cranberry syrup to a large pot and bring to a boil. Turn to low and let simmer until thickened for about 30-40 minutes, or until you have about a cup of the juice left.
  2. Let this completely cool before adding it to a bowl, along with 1/2 cup of Tropicana Orange Juice.
  3. In a large mixing bowl, beat together 1 1/2 cups of heavy whipping cream, 8 ounces of room temperature mascarpone cheese, 1/3 cup of cane sugar, 1 teaspoon of orange zest, and 1 teaspoon of vanilla with an electric hand mixer for about 2-3 minutes, or until smooth and fluffy.
  4. Grab a trifle dish or similar pan and add 2 7-ounce packages of lady finger cookies. Dip the lady fingers in the cranberry-orange mixture and layer the bottom of the dish. Add a layer of mascarpone. Repeat and continue until your dish is full.
  5. On the last layer of mascarpone, top with shaved white chocolate and orange zest.
  6. Refrigerate for at least 1 hour before serving and enjoying.
