Recipe Ingredients
- 7 large eggs
- 1/2 cup cottage cheese
- 2 tablespoons sweet pickle relish
- 2 tablespoons chopped fresh dill
- 2 teaspoons Dijon mustard
- Kosher salt and freshly ground black pepper, to taste
- 4 croissants, split
- 1 avocado, halved, pitted, peeled and sliced
- 1 large beefsteak tomato, sliced
- 1/2 head bibb lettuce, leaves separated
Recipe Directions
- Preheat air-fryer to 250°F. Place eggs in air-fryer basket and cook for 16 to 18 minutes, until whites and yolks are completely set.
- Remove eggs from the air-fryer and rinse under cold water until cool enough to handle. Carefully peel eggs and roughly chop.
- Combine eggs, cottage cheese, relish, dill and mustard together in large bowl. Season with salt and pepper, to taste. Spread egg salad evenly over bottom half of croissants. Top with avocado, tomato, lettuce and remaining top halves of croissants. Serve and enjoy.
