Recipe Ingredients
- 1/4 cup Land O’ Lakes Unsalted Butter, room temperature, plus more for greasing
- 3 lbs. frozen diced sweet potatoes
- 1/4 cup packed brown sugar
- 1/4 cup honey
- 1/4 cup milk
- 2 large eggs, lightly beaten
- 1 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 2 cups mini marshmallows
- 1/2 cup chopped pecans, for garnish
Recipe Directions
- Preheat oven to 375°F and grease a 9x13-inch baking dish with butter. Fill large saucepan halfway with water and bring to boil over high heat. Add potatoes and cook for 5 to 7 minutes until fork-tender. Drain and let cool.
- Mash potatoes, sugar, honey, butter, milk, eggs, cinnamon, vanilla and salt together in large bowl until smooth. Spoon mixture into prepared baking dish. Top evenly with marshmallows.
- Bake until marshmallows are golden-brown and potato mixture is fully heated through, about 25 to 30 minutes. Garnish with pecans and serve warm.
