Recipe Ingredients

  • 8 Delimex® Chicken and Cheese Taquitos
  • 2 heads romaine lettuce hearts, cut into 2-inch pieces
  • 1 cup shredded cheddar cheese
  • 4 plum tomatoes, seeded and chopped
  • 1 cup frozen corn kernels, thawed
  • 1 cup black beans, drained and rinsed
  • Ranch dressing, for serving

Recipe Directions

1. Heat air-fryer to 350°F. Place taquitos in an even layer in air-fryer basket. Cook for 7 to 8 minutes, shaking basket halfway through, until fully heated through. Cut each taquito in half.

2. Divide lettuce between 4 serving bowls. Top evenly with cheese, tomatoes, corn and beans. Top each bowl with 4 taquito halves. Drizzle with ranch dressing and serve.
