Recipe Ingredients
- 1 cup apple cider
- 1 pint So Delicious Very Vanilla Cashewmilk Frozen Dessert
- 1 ¾ cups all purpose flour
- ¼ cup coconut or brown sugar
- 1 ¼ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon baking soda
- ¼ teaspoon baking powder
- ¼ cup apple butter
- ¼ cup non-dairy milk
- 1 egg
- ¼ cup browned butter
- 1 quart vegetable or avocado oil
- ¼ cup cane sugar
- 2 tablespoons brown sugar
Recipe Directions
- For reduced apple cider, cook down 1 cup apple cider in a saucepan over low heat, for about 45 minutes or until left with ¼ cup condensed apple cider.
- In a large mixing bowl, whisk together all purpose flour, ¼ cup of coconut or brown sugar, ¼ teaspoon of cinnamon, salt, baking soda, and baking powder.
- Mix in reduced apple cider, apple butter, non-dairy milk, egg, and browned butter until dough is sticky.
- Transfer dough to a clean, floured surface. Sprinkle some all purpose flour on top, and flatten the dough until about 1 centimeter thick.
- Cut the dough into circles, using a pastry cutter or a mason jar, and use a smaller bottle lid to cut out circles in the middle to make donut shape.
- To make cinnamon sugar mixture, combine cane sugar, 2 tablespoons brown sugar, and 1 teaspoon cinnamon.
- Add 1 quart of oil to a pot and heat over medium to about 325°F.
- Fry the donuts on each side for about 2 minutes each, or until they are golden brown. When done, transfer them immediately to the cinnamon sugar mixture to coat.
- Let cool for about 10 minutes, then cut in half and scoop So Delicious Very Vanilla Cashewmilk Frozen Dessert on top.
