- 1 (12 oz.) package of 24 medjool dates, pitted
- 6 oz. ricotta cheese
- 1 (6 oz.) bag shredded parmesan cheese
- 6 slices applewood smoked uncured bacon; cut each slice to fit evenly around each date
- 24 bamboo picks

Recipe Directions
- Pre-heat oven to 375 °F. Line (2) 13-inch x 18-inch baking sheets with aluminum foil.
- In a small bowl, mix cheeses to combine. Slice open one side of each date, lengthwise. Fill each date with a half-ounce spoonful of cheese mixture and close to form a seam.
- Wrap 1/3 of uncooked bacon slice tightly and evenly around each date, making sure to cover the open date seam completely. Secure each with a bamboo pick, keeping the bacon seam on the bottom.
- Place each onto prepared baking sheet (about 12 per sheet). Bake 20 to 25 minutes or until bacon is crispy on all sides. Transfer to a serving platter, keeping bamboo picks intact. Serve immediately.
