Recipe Ingredients
- 4 large eggs
- 1 tablespoon white distilled vinegar
- 4 Bays Original English Muffins, split and toasted
- 1 avocado, halved, pitted, peeled and sliced
- 1 (8 ounce) package smoked salmon
- 1/2 small red onion, thinly sliced
- 2 tablespoons drained capers
- Fresh dill springs, for garnish
Recipe Directions
- Fill a small pot with water and vinegar and bring to a simmer. Break eggs into water and poach until whites are set and yolk is still runny, about 2 to 3 minutes. Transfer to a paper-towel-lined plate to let drain.
- Top English muffin halves with avocado, smoked salmon, poached eggs, red onion, capers and dill. Serve and enjoy.
