Recipe Ingredients
- 1 (16-ounce) box Seapak Popcorn Shrimp
- 3 cups pineapple, peeled and cut into 1/2-inch pieces
- 1 avocado, halved, pitted, peeled and cut into 1/2-inch pieces
- 1 red bell pepper, cut into 1/2-inch pieces
- 1/2 small red onion, chopped
- 1/4 cup roughly chopped fresh cilantro
- 1 lime, juiced
- Kosher salt and freshly ground black pepper, to taste
- 12 (6-inch) corn tortillas, lightly charred
Recipe Directions
- Preheat air-fryer to 390°F. Arrange shrimp in a single layer in air-fryer basket and cook for 7 to 8 minutes, until fully heated through and crisp. For best results, turn product halfway through cooking.
- Meanwhile, combine pineapple, avocado, bell pepper, onion, cilantro and lime juice together in medium bowl. Season with salt and pepper.
- Divide shrimp evenly onto each tortilla. Top with pineapple salsa and serve.
