Recipe Ingredients

  • 1 (16-ounce) box Seapak Popcorn Shrimp
  • 3 cups pineapple, peeled and cut into 1/2-inch pieces
  • 1 avocado, halved, pitted, peeled and cut into 1/2-inch pieces
  • 1 red bell pepper, cut into 1/2-inch pieces
  • 1/2 small red onion, chopped
  • 1/4 cup roughly chopped fresh cilantro
  • 1 lime, juiced
  • Kosher salt and freshly ground black pepper, to taste
  • 12 (6-inch) corn tortillas, lightly charred

Recipe Directions

  1. Preheat air-fryer to 390°F. Arrange shrimp in a single layer in air-fryer basket and cook for 7 to 8 minutes, until fully heated through and crisp. For best results, turn product halfway through cooking.
  2. Meanwhile, combine pineapple, avocado, bell pepper, onion, cilantro and lime juice together in medium bowl. Season with salt and pepper.
  3. Divide shrimp evenly onto each tortilla. Top with pineapple salsa and serve.
