Recipe Ingredients
- 1 box of Mrs. T's Mini Classic Cheddar Pierogies
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 ounce taco seasoning
- 1/2 cup red salsa
- 15 ounces black beans, rinsed and drained
- 1 can sweet corn, rinsed and drained
- 1 cup shredded cheddar or Mexican blend cheese
Toppings of choice such as:
- Diced tomatoes, cilantro, salsa, shredded lettuce, sour cream, black olives, etc.
Recipe Directions
- Cook Mrs. T's Mini Classic Cheddar Pierogies with olive oil in a skillet on the stovetop per package directions (approximately 8 minutes per side), until golden brown. Remove cooked pierogies from the pan and set aside.
- Brown the beef in the same skillet until no pink remains (approximately 7 to 10 minutes).
- When the beef is almost done cooking, preheat oven to broil setting.
- Remove any fat from the skillet, then stir in the salsa and taco seasoning until well combined.
- Add the black beans, corn, and half of the cheese to the skillet, and stir to distribute throughout the beef mixture.
- Spread half of the beef mixture into an even layer on the bottom of an 8x8 baking dish.
- Layer half of the pierogies over the beef mixture.
- Add the remaining beef mixture over the pierogies and spread in an even layer.
- Top with remaining pierogies and sprinkle with remaining cheese.
- Place the baking dish in the oven on the broil setting to melt the cheese (approximately 2 minutes).
- Serve with your favorite toppings and enjoy.
