Recipe Ingredients

  • 1 box of Mrs. T's Mini Classic Cheddar Pierogies
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 ounce taco seasoning
  • 1/2 cup red salsa
  • 15 ounces black beans, rinsed and drained
  • 1 can sweet corn, rinsed and drained
  • 1 cup shredded cheddar or Mexican blend cheese

Toppings of choice such as:

  • Diced tomatoes, cilantro, salsa, shredded lettuce, sour cream, black olives, etc.

Recipe Directions

  1. Cook Mrs. T's Mini Classic Cheddar Pierogies with olive oil in a skillet on the stovetop per package directions (approximately 8 minutes per side), until golden brown. Remove cooked pierogies from the pan and set aside.
  2. Brown the beef in the same skillet until no pink remains (approximately 7 to 10 minutes).
  3. When the beef is almost done cooking, preheat oven to broil setting.
  4. Remove any fat from the skillet, then stir in the salsa and taco seasoning until well combined.
  5. Add the black beans, corn, and half of the cheese to the skillet, and stir to distribute throughout the beef mixture.
  6. Spread half of the beef mixture into an even layer on the bottom of an 8x8 baking dish.
  7. Layer half of the pierogies over the beef mixture.
  8. Add the remaining beef mixture over the pierogies and spread in an even layer.
  9. Top with remaining pierogies and sprinkle with remaining cheese.
  10. Place the baking dish in the oven on the broil setting to melt the cheese (approximately 2 minutes).
  11. Serve with your favorite toppings and enjoy.
