Recipe Ingredients
- 1 (32-ounce) bag tater tots, thawed
- 1 tablespoon distilled white vinegar
- 4 large eggs
- 4 slices frozen, fully-cooked pork sausage patties, cooked and kept warm
- 1 cup store-bought or homemade hollandaise sauce, warmed
- Chopped fresh chives, for garnish
Recipe Directions
- Preheat oven to 200°F. Heat a small waffle iron until very hot and lightly coat with nonstick cooking spray. Working in batches, spread roughly 1 cup of cooked toter tots on the waffle iron. Close and cook until nearly crisp, about 3 minutes.
- Open waffle iron and fill in any holes in the waffle with more tater tots. Close and cook until golden and crispy, about 2 to 3 minutes. Cook time may vary, follow manufacturer’s instructions for best results. Transfer waffles to a rimmed baking sheet and keep warm in oven until ready to serve.
- Fill a small pot with water and vinegar and bring to a simmer. Break eggs into water and poach until whites are set and yolk is still runny, about 3 minutes.
- Top waffles evenly with sausage, poached eggs and hollandaise sauce. Garnish with chives and serve.
