Recipe Ingredients
- 1/2 (28-ounce) bag of Grown in Idaho® Hand Cut Style Fries
- 1 tablespoon unsalted butter
- 8 large eggs, lightly beaten
- Kosher salt and freshly ground black pepper, to taste
- 12 (6-inch) flour tortillas
- 8 slices bacon, cooked and crumbled
- 2 avocados, halved, pitted, peeled and sliced
- 3 plum tomatoes, seeded and cut into 1/4-inch pieces
- 2 cups store-bought or homemade cheddar cheese sauce, warmed
- Chopped fresh chives, for garnish
Recipe Directions
- Preheat oven to 420° and line a rimmed baking sheet with parchment paper. Place fries evenly on prepared baking sheet. Bake according to package directions.
- Meanwhile, melt butter in large nonstick skillet over medium-high heat. Add eggs and scramble, stirring constantly until just set, about 30 seconds. Season with salt and pepper, to taste. Remove from heat.
- Divide scrambled eggs and fries evenly onto each tortilla. Top with bacon, avocado and tomatoes. Drizzle with cheese sauce and garnish with chives. Serve and enjoy.
