Recipe Ingredients

  • 1/2 (28-ounce) bag of Grown in Idaho® Hand Cut Style Fries
  • 1 tablespoon unsalted butter
  • 8 large eggs, lightly beaten
  • Kosher salt and freshly ground black pepper, to taste
  • 12 (6-inch) flour tortillas
  • 8 slices bacon, cooked and crumbled
  • 2 avocados, halved, pitted, peeled and sliced
  • 3 plum tomatoes, seeded and cut into 1/4-inch pieces
  • 2 cups store-bought or homemade cheddar cheese sauce, warmed
  • Chopped fresh chives, for garnish

Recipe Directions

  1. Preheat oven to 420° and line a rimmed baking sheet with parchment paper. Place fries evenly on prepared baking sheet. Bake according to package directions.
  2. Meanwhile, melt butter in large nonstick skillet over medium-high heat. Add eggs and scramble, stirring constantly until just set, about 30 seconds. Season with salt and pepper, to taste. Remove from heat.
  3. Divide scrambled eggs and fries evenly onto each tortilla. Top with bacon, avocado and tomatoes. Drizzle with cheese sauce and garnish with chives. Serve and enjoy.
