Recipe Ingredients

  • 1 cup shredded carrots
  • 1 cup shredded cabbage
  • 1/4 cup sliced green onion
  • 1 red bell pepper, sliced
  • 1/2 cup chopped cilantro
  • 3 wonton wrappers
  • 3 tablespoons Tropicana Orange Juice
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated ginger
  • 1 clove minced garlic
  • 1/4 cup chopped peanuts

Recipe Directions

  1. Start by making the crispy wonton strips. Cut the wonton wrappers in half and slice into strips. Coat a pan in neutral oil (such as avocado oil) and fry the wonton strips over medium heat until golden brown and crispy. Transfer to a paper towel or wire rack to cool.
  2. Make the dressing by whisking together the peanut butter, orange juice, soy sauce, rice vinegar, ginger and garlic until smooth.
  3. Toss all of the veggies and dressing into a large mixing bowl.
  4. Serve topped with the crispy wonton strips and peanuts.
