Recipe Ingredients
- 1 cup shredded carrots
- 1 cup shredded cabbage
- 1/4 cup sliced green onion
- 1 red bell pepper, sliced
- 1/2 cup chopped cilantro
- 3 wonton wrappers
- 3 tablespoons Tropicana Orange Juice
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon grated ginger
- 1 clove minced garlic
- 1/4 cup chopped peanuts
Recipe Directions
- Start by making the crispy wonton strips. Cut the wonton wrappers in half and slice into strips. Coat a pan in neutral oil (such as avocado oil) and fry the wonton strips over medium heat until golden brown and crispy. Transfer to a paper towel or wire rack to cool.
- Make the dressing by whisking together the peanut butter, orange juice, soy sauce, rice vinegar, ginger and garlic until smooth.
- Toss all of the veggies and dressing into a large mixing bowl.
- Serve topped with the crispy wonton strips and peanuts.
