Recipe Ingredients
- 6-8 bell peppers
- 1 lb. minced beef, cooked
- 2 cups rice, cooked
- 3 tomatoes, chopped
- 2 medium, yellow onions, chopped
- 1/2 parsley bunch, chopped
- 3 tablespoons olive oil
- 1 cup cheddar cheese
- 2 teaspoons salt
- 1 teaspoon black pepper
Recipe Directions
- Preheat oven to 450°F and oil a baking dish. Remove the tops from the peppers (but don't dispose of them), remove the seeds and membranes, and place in the baking dish.
- In a large bowl, mix together the cooked meat, cooked rice, tomatoes, onions, parsley, cheddar cheese, salt, and pepper.
- Scoop the filling into the peppers. Add their respective tops, cover the dish, and bake for 24-30 minutes until the bell peppers soften. Optional: add an additional 1 tablespoon of cheese and broil for 3-4 minutes until fully cooked. Serve immediately.
