Recipe Ingredients

  • 6-8 bell peppers
  • 1 lb. minced beef, cooked
  • 2 cups rice, cooked
  • 3 tomatoes, chopped
  • 2 medium, yellow onions, chopped
  • 1/2 parsley bunch, chopped
  • 3 tablespoons olive oil
  • 1 cup cheddar cheese
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Recipe Directions

  1. Preheat oven to 450°F and oil a baking dish. Remove the tops from the peppers (but don't dispose of them), remove the seeds and membranes, and place in the baking dish.
  2. In a large bowl, mix together the cooked meat, cooked rice, tomatoes, onions, parsley, cheddar cheese, salt, and pepper.
  3. Scoop the filling into the peppers. Add their respective tops, cover the dish, and bake for 24-30 minutes until the bell peppers soften. Optional: add an additional 1 tablespoon of cheese and broil for 3-4 minutes until fully cooked. Serve immediately.
