Recipe Ingredients
- 1/2 (12.3-ounce) box Kellogg's® Eggo® Strawberry Waffles
- 1 cup heavy cream, kept cold
- 3 tablespoons sugar, or powdered sugar
- 1 teaspoon vanilla bean paste
- 1 cup mascarpone, room temperature
- 2 cups strawberries, hulled and quartered
- 1/4 cup pistachios
- Fresh mint sprigs, for garnish
Recipe Directions
- Toast waffles according to package directions.
- Meanwhile, whisk heavy cream, sugar and vanilla together in large bowl until soft peaks form. Add mascarpone and whip until stiff.
- Stack waffles and top with whipped cream, strawberries and pistachios. Garnish with mint and serve.
