Recipe Ingredients
- 2 teaspoons olive oil
- 1 (16 ounce) package Jimmy Dean Regular Premium Pork Sausage Roll
- 1 small leek, white and light green part only, thinly sliced
- 2 cloves garlic, minced
- 3 cups low-sodium chicken broth
- 1 (14.5 ounce) can diced tomatoes, drained
- 2 teaspoons minced fresh thyme, plus more for garnish
- 1 teaspoons smoked paprika
- 1 bunch Lacinato kale, stems removed and chopped
- 1 (15 ounce) can butter beans drained and rinsed
Recipe Directions
- Heat oil in a large heavy-bottom pot over medium-high heat. Add sausage, and cook, breaking up into large crumbles with a wooden spoon as it cooks. Cook for about 5 minutes, until sausage is cooked through and begins to brown.
- Stir in leeks and cook until tender, about 3 to 4 minutes. Add garlic and cook until fragrant, about 30 seconds.
- Stir in broth, tomatoes, thyme and paprika. Bring to a simmer over medium-low heat. Stir in kale and beans, and cook, covered, until kale has wilted and flavors develop, about 15 to 20 minutes. Season with salt and pepper to taste. Divide stew between bowls. Garnish with thyme and serve.
