Recipe Ingredients

  • 12 frozen Jośe Olé® Taquitos, Chicken in Corn Tortilla
  • 1 (30-ounce) bag frozen shredded hash browns
  • 1 medium yellow onion, finely chopped
  • 1/4 cup vegetable oil
  • 5 large eggs, lightly beaten
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • Sour cream, for serving
  • Chopped fresh chives, for garnish

Recipe Directions

  1. Preheat oven to 350°F and coat a 9x13-inch baking dish with nonstick cooking spray. Arrange taquitos in a single layer in bottom of prepared baking dish.
  2. Mix potatoes, onions, oil, eggs, salt and pepper together in large bowl until combined. Spread potato mixture evenly over taquitos.
  3. Bake until top of casserole is golden-brown and center is set, about 45 to 1 hour. Allow to cool at room temperature for 10 minutes before slicing.
  4. Top with a dollop of sour cream. Garnish with chives and serve.
