Recipe Ingredients

  • 1 bag Alexia House Cut Fries
  • 2 pounds beef, cut into 1" pieces
  • 2 tablespoons light soy sauce
  • 1 tablespoon minced garlic
  • 1/4 teaspoon black pepper
  • 3 tablespoons oil
  • 1 medium red onion
  • 4 Roma tomatoes
  • 1 tablespoon minced garlic

Sauce

  • 6 tablespoons light soy sauce
  • 1 1/2 tablespoons oyster sauce
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 2 teaspoons cornstarch
  • 1 tablespoon aji Amarillo paste, optional

Aji Verde Sauce

  • 1/3 cup mayonnaise
  • 2 cups cilantro
  • 1-2 jalapeños
  • Juice from 1/2 of a lime
  • 4 cloves garlic
  • 1/3 cup parmesan cheese
  • 1 tablespoon olive oil
  • Pinch of salt
  • 1 teaspoon aji Amarillo paste, optional
  • Chopped cilantro for garnish

Recipe Directions

1. Cut the beef into cubes and marinate with light soy sauce, minced garlic and black pepper. Marinate for 10 minutes. Air fry the French fries according to the package instructions.
2. Prep the sauce. In a bowl, add light soy sauce, oyster sauce, red wine vinegar, cornstarch and sugar. Optional: aji Amarillo paste (if available).
3. Cut the red onions into 1/2 inch thick pieces and cut the tomatoes into quarters, then remove the seeds.
4. Make the aji Verde sauce.
5. In a large pan, add oil and wait until it’s hot. Sear the beef for 1-2 minutes per side, then remove from the pan. Using the same pan, add red onions and garlic, then cook for 2 minutes. Add beef and sauce, then cook for 1 minute. Add French fries and tomatoes, then toss together for 30 more seconds.
6. Serve immediately with steamed rice and aji Verde sauce.
