Recipe Ingredients
- 1 tablespoon unsalted butter
- 2 cloves garlic, minced
- 8 ounces sliced deli ham, roughly chopped
- 1 1/2 cups low-sodium vegetable broth
- 1 (14-ounce) bag frozen gnocchi
- 1/4 cup heavy cream
- Kosher salt and freshly ground black pepper, to taste
- 1 cup frozen chopped spinach
- 1 1/2 cups shredded Italian cheese blend
- Chopped fresh basil, for garnish
Recipe Directions
- Preheat oven to 450°F. Melt butter in a large cast-iron skillet over medium heat. Add garlic, and cook until fragrant, about 30 seconds. Add ham, and cook, stirring occasionally, until lightly browned, about 1 to 2 minutes. Stir in broth and bring to simmer over medium-high heat. Add gnocchi, and cook, covered until slightly tender, about 2 to 3 minutes. Stir in cream and season with salt and pepper, to taste.
- Sprinkle evenly with spinach and cheese. Bake until cheese is golden-brown and gnocchi is tender, about 8 to 10 minutes. Top with basil, and serve.
