Recipe Ingredients
- 1 (18 oz.) box Seapak Butterfly Shrimp
- 1 head bib lettuce, leaves separated
- 3 Persian cucumbers, cut into 1/4-inch slices
- 1 medium carrot, cut into matchsticks
- 1/2 cup fresh mint leaves, for garnish
- Sweet chili sauce, honey mustard, or peanut sauce, for serving
Recipe Directions
- Preheat oven to 425°F and line a rimmed baking sheet with aluminum foil or parchment paper.
- Arrange shrimp in a single layer on prepared baking sheet and place on middle rack of oven. Bake for 11 to 12 minutes, until fully heated through and crisp. For best results, turn product halfway through.
- Layer shrimp, cucumbers, carrots and mint in lettuce leaves. Drizzle with sweet chili sauce and enjoy.
