- 1 Eggo Homestyle Waffles
- 3/4 cup whipped cream cheese
- 1 tablespoon shallots, finely chopped
- 2 tablespoons chives, chopped
- 2 tablespoons dill, chopped
- 1 tablespoon fresh lemon juice
- Pastrami styled lox
- Microgreens
- Capers
- Salt and pepper, to taste
Recipe Directions
- Add cream cheese, shallot, herbs, and lemon juice to a bowl and mix until combined.
- Cook Eggo waffles according to box directions.
- To assemble the sandwich, spread herbed cream cheese on the toasted waffles, top with salmon, microgreens, capers, salt and pepper. Serve immediately and enjoy!
