Recipe Ingredients
- 1/4 cup unsalted butter
- 1 pound chicken breasts, cut into 1/2-inch cubes
- 1 small yellow onion, chopped
- 1/4 cup all-purpose flour
- 1 1/2 cups low-sodium chicken broth
- 1/4 cup heavy cream
- 1/4 cup cream cheese, room temperature
- 1 (12-ounce) package of frozen mixed vegetables
- 1/2 teaspoon each kosher salt and freshly ground black pepper
- 1/2 (32-ounce) bag Ore-Ida Golden Tater Tots
- 1 tablespoon chopped fresh parsley
Recipe Directions
- Preheat oven to 425°F. Melt butter in large cast-iron skillet over medium heat.
- Add chicken, and cook, stirring occasionally, until light golden-brown and reaches 165°F. Stir in onion, and cook, stirring occasionally, until tender, about 3 to 5 minutes. Stir in flour, and cook until no lumps remain, about 1 minute.
- Whisk in broth, heavy cream and cream cheese, and cook, stirring occasionally, until sauce thickens, about 5 minutes. Stir in vegetables, salt and pepper until combined. Remove from heat.
- Top chicken and vegetable mixture with an even layer of tater tots until completely covered. Bake until tater tots are fully cooked, about 20 to 25 minutes. Top with parsley, and serve.
