- 3 ripe avocados
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1 (0.9-ounce) package hollandaise sauce mix, prepared according to package directions
- 4 tablespoons butter, divided
- 6 slices ham or Canadian bacon
- 6 cups water
- 6 eggs
- 3 refrigerated bagels, split in half
- Everything Bagel Seasoning for sprinkling
Recipe Directions
- To make guacamole, cut the avocados in half and remove pit. Scoop out the flesh, place in a medium bowl and mash with a fork. Add lemon juice, salt, and garlic powder; mix well and set aside.
- In a small saucepan over low heat, warm the hollandaise sauce. In a large skillet over medium heat, melt 1 tablespoon butter; heat ham or Canadian bacon 2 to 3 minutes per side.
- Meanwhile, in another large skillet, bring water to a boil. Crack eggs and gently drop each into boiling water. Cook 4 to 6 minutes, or until eggs are firm on the outside.
- Toast bagel halves, spread evenly with remaining 3 tablespoons butter and place on a platter. Top each half with ham or Canadian bacon, guacamole, and a poached egg. Top eggs with hollandaise sauce and a sprinkle of Everything Bagel Seasoning; serve immediately.
