Recipe Ingredients
- 2 tbsp cashew butter
- 2 tbsp avocado oil
- 3 tbsp brown sugar
- 1 large egg
- 1/2 tsp vanilla extract
- 1 cup almond flour
- ½ tbsp coconut flour
- 1/4 tsp salt
- 1/4 tsp baking soda
- 2 tbsp dark chocolate chips
- ¼ cup chocolate chunks
Recipe Directions
- Preheat oven to 350ºF and grease a 6” mini cast iron skillet cookie.
- In a medium bowl mix together cashew butter and oil. Whisk in brown sugar, egg and vanilla until smooth. Add in almond flour, coconut flour, baking soda, and salt; stir until combined then fold in chocolate chips.
- Bake at 350ºF for 15-18 minutes, until edges are lightly golden.
- Sprinkle with sea salt and serve with your favorite Graeter's Ice Cream flavor!
