Ingredients for the hash:

  • 2 tablespoons coconut oil
  • 2 tablespoons butter
  • 1/2 cup onion, diced
  • 2 cloves garlic, diced
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon cayenne
  • 3 cups sweet potato, diced
  • Salt, to taste
  • Pepper, to taste

Ingredients for the eggs:

  • 8 eggs
  • 1/2 cup Lactaid Calcium Enriched Whole Milk
  • 1 teaspoon turmeric
  • 2 tablespoons butter
  • Pepper, to taste
  • Salt, to taste

For assembly:

  • 4 (8 1/2-inch) flour tortillas
  • 1/4 cup green onions, chopped
  • 1/4 cup cilantro, chopped

Recipe Directions

Instructions:

  1. Start by sautéing coconut oil, onion, sweet potato and spices in a pan. Then roast for 30 minutes.
  2. Meanwhile, combine eggs and turmeric with Lactaid 2% Reduced Fat Milk for extra fluffy and flavorful scrambled eggs.
  3. Finally, place the ingredients together in a tortilla and top with green onion and fresh cilantro!
