Ingredients for the hash:
- 2 tablespoons coconut oil
- 2 tablespoons butter
- 1/2 cup onion, diced
- 2 cloves garlic, diced
- 1/2 teaspoon cumin
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cayenne
- 3 cups sweet potato, diced
- Salt, to taste
- Pepper, to taste
Ingredients for the eggs:
- 8 eggs
- 1/2 cup Lactaid Calcium Enriched Whole Milk
- 1 teaspoon turmeric
- 2 tablespoons butter
- Pepper, to taste
- Salt, to taste
For assembly:
- 4 (8 1/2-inch) flour tortillas
- 1/4 cup green onions, chopped
- 1/4 cup cilantro, chopped
Recipe Directions
Instructions:
- Start by sautéing coconut oil, onion, sweet potato and spices in a pan. Then roast for 30 minutes.
- Meanwhile, combine eggs and turmeric with Lactaid 2% Reduced Fat Milk for extra fluffy and flavorful scrambled eggs.
- Finally, place the ingredients together in a tortilla and top with green onion and fresh cilantro!
