In celebration of March National Frozen Food Month, our Cool Food Panelist, Alison Lewis from Ingredients, Inc., wanted to share a fun way to dress up the typical "Bananas Foster"--Waffle Bananas Foster!
- 4 Kellogg's Eggo Waffles, toasted
- 1/4 cup butter
- 2/3 cup dark brown sugar
- 1 tsp. vanilla extract
- 3/4 tsp. ground cinnamon
- 1 pt. vanilla ice cream
- 2 bananas, thinly sliced
- 1/4 cup chopped pecans
In large, deep skillet melt butter over medium heat. Stir in sugar, vanilla and cinnamon. When mixture begins to bubble, place bananas and pecans in pan. Cook until bananas are heated, 1 to 2 minutes.
Place one waffle on a serving plate. Top with ice cream, sauce and remaining waffle. Repeat with remaining ingredients. Serve immediately.
