Southern Barbecue Chicken & Rice


Tyson's barbecue chicken with rice is a great summer meal for lunch or dinner.


  • 4 Tyson® Individually Fresh Frozen® Chicken Half Breasts, frozen
  • 1 1/2 cups water
  • 1 cup uncooked regular rice
  • 1 cup barbecue sauce
  • 1 pkg. (6 half ears) frozen corn-on-the-cob


Wash hands. In large skillet, combine water, rice, 3/4 cup barbecue sauce and chicken. Bring to a boil. Cover, reduce heat; simmer 25 minutes. Add corn and continue cooking 15 to 20 minutes, or until internal juices of chicken run clear. (Or insert instant-read meat thermometer in thickest part of chicken. Temperature should read 170°F.) Spoon remaining 1/4 cup barbecue sauce over chicken. Remove from heat; let stand 5 minutes, or until liquid is absorbed. Serve with extra barbecue sauce and corn bread if desired. Refrigerate leftovers immediately.
