Turkey Meatball Pot Pie


This turkey meatball pot pie recipe is easy and comforting.


  • 2 12-oz. bags Rosina® Turkey Meatballs
  • 6 Tbsp. butter or margarine
  • 1 cup onions
  • 2-3 tsp. curry powder
  • 1/2 tsp. ground black pepper
  • 6 Tbsp. flour
  • 1/2 tsp. salt
  • 3 cups chicken stock
  • 2 cups broccoli florets, blanched
  • 3/4 cup roasted red peppers, diced
  • 2 15-oz. cans potatoes, cubed
  • 2 eggs, beaten
  • 1/4 cup chopped parsley
  • 1/4 cup chopped chives
  • 1 12-oz. can of buttermilk refrigerated biscuits


Preheat oven to 350 degrees F. Thaw meatballs in microwave for 1-2 minutes; cut into quarters. Grease 9"13" cake pan or casserole dish. In a 3-quart saucepan, melt butter and saute onions. Add curry powder and black pepper. Stir over medium heat for 1-2 minutes. In a separate bowl, mix flour, salt and chicken stock; add to onion mixture. Bring to a boil, stir for one minute and remove from heat. Add meatballs, broccoli, red pepper, salt and pepper. Cut potatoes into cubes and mix with eggs, parsley and chives. Spread potato mixture into baking dish. Pour entire onion mixture evenly over potatoes. Place in oven and bake 15 minutes. Remove pot pie from the oven and arrange the biscuits on top. Return to oven. Bake 15-18 minutes more or until biscuits are brown.
