This easy orange cranberry muffin recipe makes for a delicious breakfast, snack, or treat!
- 1 1/2 cup all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 4-oz. unsalted butter, softened ( 1 stick )
- 1 cup brown sugar
- 2 large eggs, lightly beaten
- 3/4 cup Tropicana Pure Premium Orange Juice
- 1 cup dry cranberries
- 1 Tbsp. granulated sugar
- 1 tsp. ground cinnamon
Preheat oven to 400F.
In small bowl combine flour, baking soda, baking powder, and salt; set aside.
In mixing bowl whip butter with sugar until light and fluffy.
Slowly add eggs, a little at a time, whipping well after each addition.
Fold in reserved dry mixture alternately with Tropicana Pure Premium® Orange Juice. Stir in cranberries. Spoon equally among 12 greased muffin cups. Sprinkle evenly with mixture of cinnamon and sugar. Bake 14-16 minutes or until cooked through. Let cool before serving. Serves 12.
