No-Bake Banana Ricotta Icebox Pie


The perfect make-ahead, crowd-pleasing dessert.


Graham cracker crust:

  • 1-1/2 cups crushed graham crackers
  • 1/3 cup brown sugar
  • 6 Tbsp. melted butter
Pie filling, topping:
  • 2 cups Frigo® Ricotta cheese (whole milk or part-skim)
  • 1/2 tsp. ground nutmeg
  • 1/2 tsp. ground cinnamon
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 1 Tbsp. vanilla extract
  • Grated zest from 1 lime (optional)
  • 2 ripe bananas, sliced into 1/4-in. rounds


For the crust:

Crush graham crackers until fine and uniform. Add sugar and melted butter until combined. Press crust mixture into a 9-inch pie or tart pan.

For the filling:
In a large bowl, mix together all pie filling ingredients except bananas until combined. Scoop ricotta mixture on top of crust and smooth top as needed. Top pie with sliced bananas. Chill uncovered in the refrigerator until firm, about 45 minutes.
