White Chocolate-Blackberry Parfaits

  • 1 Mrs. Smith's Blackberry Cobbler (prepare cobbler according to directions on package.)

For mousse:

  • 9 oz. of white chocolate, chopped
  • 1/4 cup water
  • 1/4 cup sour cream
  • 4 tsp. fresh lemon juice
  • 1/2 cup whipping cream, chilled


Combine white chocolate and 1/4 cup water in top of double boiler set over simmering water. Stir until white chocolate melts and mixture is smooth. Remove top of double boiler from over water; cool for 10 minutes.

Stir sour cream and lemon juice in a large bowl to blend. Stir in melted chocolate mixture. Beat cream in another large bowl until stiff peaks form.

Gently fold whipped cream into chocolate mixture in 3 steps. Cover and chill until mousse is set, about 2 hours.

Spoon white chocolate mousse into a pastry bag fitted with a medium star tip. Pipe half of the mousse into 4 parfait or wide mouthed wine glasses.

Using an ice cream scoop, divide baked cobbler into the 4 glasses. Top each parfait with the remaining mousse, dividing equally.
Garnish with a fresh blackberry and serve.
