Apple-Mascarpone Parfaits

  • 1 (3 lb. 1 oz.) pkg. frozen Mrs. Smith's Special Recipe Deep Dish Apple Pie
  • 1 (8 oz.) pkg. mascarpone cheese, softened
  • 1 (3 oz.) pkg. cream cheese, softened
  • 1/4 cup Domino Granulated Sugar
  • 1 tsp. vanilla extract
  • 1/2 cup toasted almonds


Remove plastic overwrap from apple pie. Open center hole, and cut 4 to 6 slits in top crust. Place pie on an aluminum foil-lined baking sheet.

Bake at 375F for 1 hour and 20 minutes to 1 hour and 30 minutes, shielding top of pie with aluminum foil after 1 hour. Cool pie on a wire rack.

Beat mascarpone cheese and next 3 ingredients at medium speed with an electric mixer until smooth.

Spoon half of apple pie evenly into 8 small parfait glasses; top evenly with half of cheese mixture. Repeat layers. Sprinkle with toasted almonds, and chill 2 hours.
