- 1 1/3 cup apple juice
- 1/4 cup honey
- 1 1/2 Tbsp. cornstarch
- 2 tsp. grated lemon rind
- 1 Tbsp. butter
Remove plastic overwrap from pie. Open center hole, and cut 4 to 6 slits in top crust. Place pie on an aluminum foil-lined baking sheet. Bake at 375F for 1 hour and 20 minutes to 1 hour and 30 minutes, shielding top of pie with aluminum foil after 1 hour.
Whisk together apple juice, honey, and cornstarch in a saucepan until smooth. Cook over medium heat, whisking constantly, 6 to 8 minutes or until bubbly. Stir in lemon rind and butter. Serve over pie.
