- 1 pkg. Bob Evans Zesty Hot Roll Sausage
- 1 can (15 oz.) black beans, drained and rinsed
- 1 cup prepared salsa
- 6 corn tortillas
- 6 eggs
In large non-stick skillet over medium heat, crumble and cook sausage until browned. Stir in black beans and salsa. Cook 1 to 2 minutes or until hot. Pour into bowl and keep warm. Wipe out skillet. Spray both sides of tortillas with cooking spray. Toast on each side in skillet over medium heat until lightly brown. Place one tortilla on each serving plate. In same skillet over medium-low heat, cook eggs to desired degree of doneness. Top each tortilla with about ¾ cup sausage mixture and one fried egg. Add any optional toppings and serve. Optional toppings: shredded cheddar cheese, sour cream, salsa, sliced avocado, diced jalapeno, diced green onion
